MY CURRENT TOP 5 VEGAN MEALS

Honestly, being vegan isn't difficult, as long as you are committed and you're not always eating out of snack and go bars..because a lot of companies are still to jump on the vegan bandwagon and those that have usually have only one option. However, so many places are opening up their options to the new plant-based diet and that is awesome. Even dairy companies that have been around for decades are now changing to plant based! I thought I would share some of my favourite vegan snacks and meals and what I like to try, in no particular hierarchy.

1. Pulled pork burgers with red Leicester cheese and tomato sauce.


I actually LOVE this meal. Linda McCartney's pulled pork vegan patties with vegan red leicester cheese melted onto a seeded bun. I usually add chips and veg on the side. You can find all these things in big Tesco!

2. Root mash and lettuce scoopers.

This is one of my all time favourites. It can be made with oil or vegan butter. You can use Maris Piper poatatoes and carrot with swede or celeriac. It's a really nice mash and gives more nutrients than just the potatoes alone. You can find these in any store, and again Tesco stocks the soy butters most frequently. I also enjoy adding romaine lettuce on the side to scoop the mash up as it gives more greenery to your diet and it is a nice fresh taste in comparison to the hot mash.

3. Overnight / fresh oats with fruit.

I really love porridge in the morning. Sometimes I do it the night before so when I am getting up at stupid o'clock I can just heat it up and add toppings. At the moment my favourite is having oats with a nut milk and putting in chopped apple, frozen blueberries and cinnamon powder. I heat it and add more berries and apple and it's good to go. I also do other oats and usually add my hemp protein, spirulina, cacao and linseed powders.

4. Mexican bean chilli with nachos and rice.

My boyfriend makes this meal for us often as it is vegan but its also flexible with adding cheese and different rices and nachos. I personally just have the free from nachos form Tesco with Uncle Ben's lemon and rosemary rice and the tesco 3 bean chilli soup....I think? You could also add vegan cheese and guacamole if you wanted. It's a really quick and easy dinner.

5. Shredded duck wraps.


Linda McCartney's vegan shredded duck is the BOMB. I honestly am so glad that the brand made it. They also do a shredded chicken! My mum bought it and put it with the Sharwood's hoisin sauce which luckily is vegan. You could find some vegan authentic pancakes or just use wraps that are not made with milk or egg. You could also have the spring onions but I just had it plain. Honestly everyone I know likes this!!
